The iBali Philosophy

Taking what the earth and mother nature have so generously provided, we as chefs do our best to let the ingredients tell their own story. A story of farmers working the land, a story of differing climates, a story of soil composition and the ever-changing seasons. A story from farm to table, that encompasses the whole cycle of life, which we have lost touch with in our busy day-to-day lives.

We at iBali want to bridge that gap for you, your loved ones and friends. We want to give you your time back, to enjoy the beauty of adding to your own story and the story of those around you. 

Let us add to your “journey” of life and ultimately write a story that is cherished as the years go by and passed on to those who come after us.

Nicholas is a classically trained chef with a passion for global flavours and a talent for creating memorable dining experiences. Food has always been close to his heart, a passion sparked early by his mother, an exceptional cook who inspired his journey from the time he was knee-high to a grasshopper. By the age of 17, he had already committed to making the culinary arts his life’s work.

After completing 3.5 years of intensive culinary training in South Africa and Italy, he gained experience in some of South Africa’s top fine-dining restaurants. Over six years in professional kitchens, he refined his skills and eventually became Executive Sous Chef at The Pot Luck Club, which was ranked the ninth-best restaurant in South Africa in 2016.

In 2017, he took his passion to sea as a private chef aboard luxury superyachts. For the next six years, he worked on both motor and sailing yachts ranging from 30 to 116 metres, serving private and charter clients with the highest standards and most discerning tastes. From intimate dinners to lavish celebrations, he learned to create dishes tailored to every palate and occasion.

Now living in Victoria with his partner, Nicholas brings his global culinary experience into private homes, crafting unforgettable dining experiences designed around each guest and occasion.

About Chef Nicholas
